Raspberry Clafoutis: The Simplest Fancy Dessert You'll Ever Make
Summer is in full-swing with this easy, delicious dessert from France.
Obviously, if you’ve followed my social media account, Retro Recipes Kitchen, you’ll likely feel right at home when I make a dish that includes gelatin or could potentially be classified as “a salad.” I’m happy to report that this recipe is not that, but it does share the beautiful, textural bliss of something between a custard and a pancake.
Introducing the Clafoutis (Klah-fOO-Tee)!
This often mispronounced French delight is not only one of the easiest things in the entire world to make, but you likely have everything you need right now!
The structure of the dish is always the same, and then you essentially can modify it using different fruits or other ingredients. Currently, raspberries are looking mighty fine, but you could get creative with some summer peaches, blackberries, or just whatever tickles your fancy! A wonderfully classic pairing are pitted black cherries!
All you need to do is simply throw everything (except the fruit) into a blender, running it for a minute or so - which is the same as you’d approach making crepes! Then, grease a pan with some softened butter, add your fruit and pour the batter on top - then chuck it into a 350ºF/175ºC oven for about 50 minutes and dust with some powdered sugar and top with some lightly salted whipped cream.
